Funnel Cakes for the Memorial Day Celebration!!
Usually we only get funnel cakes when we go to the fair. My mother came across this recipe and we decided to give it a try. They turned out pretty good for armatures.
2 Eggs
1 1/2 Cups Milk
2 Cups Flour
1 teaspoon baking powder
1/2 teaspoon salt
Combine eggs and milk. Sift flour, baking powder and salt. Add egg mixture. Beat smooth with mixer. Heat oil to 350 degrees. Cover bottom opening of funnel with finger and pour batter into funnel. Funnel the batter into the oil and fry until golden brown...about 3 minutes. Drain and sprinkle with powdered sugar. Makes 1 dozen.

This will be a 2 part recipe and remember it was given to my mother by her mother in law and is written exactly how it was told.
Meatballs
2-3 Pounds Lean Ground Beef
1 Cup Mixed Italian Bread Crumbs
3 Eggs
1/2 Cup Water
Salt
Pepper
Mix Well, make meatballs and fry until browned in olive oil with garlic. When Brown all around Add them to sauce and simmer 3-4 hours.

2 Large Cans Puree
1 Large Can Tomato Paste
Put tomato sauce and puree into a large sauce pan. Add enough water to make a thick sauce.

Add meatballs to sauce and simmer 3-4 hours.

2 Tablespoons Cinnamon
1 1/2 teaspoon salt
1 1/4 cup oil
2 Cups Sugar
2 teaspoons baking soda
1 teaspoon vanilla
4 eggs
3 cups grated carrots
3/4 cup walnuts chopped
Mix and pour into a greased and floured 13 X 9 X 2 inch baking pan or make cupcakes.
Bake at 350* for 40 minutes (less time for cupcakes) or until toothpick comes out clean
Cream Cheese Frosting
2 Packages 3 ounce each Cream Cheese
1/8 teaspoon salt
1 Pound powdered sugar
1 teaspoon vanilla
1 Tablespoon milk
Mix ingredients until fluffy and spread on cooled cake.
